Rising Tides
60% Grenache, 37% Syrah, 3% Mourvèdre
This is a perfect showcase of the balance between dense dry farmed flavors and structure against the brilliant limestone rooted acidity that is emblematic of the wines from this year. Red strawberry Grenache notes are grounded by darker syrah flavors of elderberry and black olives. Herbal aromatics collide with hints of oak to conjure the image of sage butter simmering in a pan. Undertones of wet granite and aged balsamic pick up on the mid-palate and carry long into the finish. Drink now through 2029.
Pairings: Roasted Chicken with root vegetables, soy glazed salmon, beef bourguignon, Thanksgiving dinner
